Stainless steel pot on an induction cooktop

Does stainless steel work on induction cooktops?

Induction cooking combines the sleekness and easy cleaning of smooth or glass top electric cooktops with the precision and control of gas cooktops, making it a versatile option in your kitchen. If you’ve recently purchased or are considering purchasing an induction cooktop, you’ll also need to choose the right cookware.

Most stainless steel has ferrous properties, which means it contains iron. As long as it has a magnetic base, it is one material that works on induction cooktops. Other materials like cast iron and enameled cast iron should also work. Read on to learn more about stainless steel’s compatibility with your induction cooktop.

How does stainless steel work on induction stoves?

Most stainless steel works on induction stoves and cooktops because it contains iron, which makes it compatible with the magnetic field generated by the stove. When placed on an induction stove, the electromagnetic energy creates an electric current in the stainless steel, generating heat and allowing it to cook your food.

Which types of stainless steel are induction-compatible?

Stainless steel cookware is compatible with induction stovetops, like this one from Whirlpool brand, if it has a magnetic base. Stainless steel with a high nickel content won't work because the nickel blocks the magnetic field. Stainless steels which are magnetic are ideal for induction cooktops.

Choosing the best cookware for your induction stove

When choosing induction-compatible cookware, opt for materials like magnetic stainless steel, cast iron or enameled cast iron. Avoid aluminum, copper and glass.

For optimal heat conduction, choose cookware with a flat bottom that aligns with the burner's size, ensuring direct contact with the cooktop. A pan that is too small might not trigger the burner, while one that is too large could lead to uneven heating.

Enameled Cast Iron Even cooking, less reactive More expensive than regular cast iron

Can you use stainless steel on an electric stove?

You can use stainless steel cookware on your electric stovetop. Induction stoves require magnetic materials like stainless steel, while electric stoves can either heat through coils or a smooth-top surface. Stainless steel's compatibility with induction, electric and gas stoves make it a versatile option.

How do you know if your stainless steel cookware is compatible with induction?

To determine if your pots and pans are suitable for induction cooking, a simple test with a magnet can provide the answer. Place the pan upside down and hold a magnet against the bottom. If the magnet sticks, indicating ferromagnetism, the pan can be used on induction cooktops.

Additionally, look for a stamped coiled spring symbol on the bottom of your cookware, which signifies induction compatibility. Familiarizing yourself with common cookware symbols can further aid in selecting the right pots and pans for your induction cooktop.

Can you use non-stick stainless steel cookware on an induction cooktop?

You can use a nonstick pan on your induction cooktop if it's made of magnetic stainless steel, cast iron or enameled cast iron. However, nonstick pans made of nonmagnetic materials like aluminum won't work with induction cooktops.
